First and foremost, if you are interested in the current state of the production and technology industry you should read Sound On Sound, the industry's standard and best magazine. The articles in there are more in-depth and up-to-date than most books on the subject.

If you are new to music technology or need to brush up, you can't go far wrong with Sound On Sound editor Paul White. Although he's written a series of small 'Basics' books which are very good, I'd always go with the Creative Recording books listed above. You'll need them both, and you might find you don't need anything else.
The Modern Recording Techniques book is good too, but pretty much covers the same turf as Paul White.
Sound and Recording is much more suited to the theoretical side of the HND and HNC. The information is much more technical and less hands-on practical. Very useful.
Acoustics and Psychoacoustics is the standard text on acoustics. Not exactly bedtime reading, unless you like your algebra. Very good for the HND Acoustics unit.
Sound Synthesis and Sampling is a useful book, although it's looking a bit long in the tooth now; this area progresses with such speed it's hard for books to keep pace. I expect a new edition is in the works.
